Zucchini Fries


So I love the crunch of french fries.  Who doesn't?  I thought I'd look past the typical baking your french fries and see what else could be done.  I made zucchini fries and thought they turned out pretty well.  My one complaint is that they don't hold their heat as long as french fries, but they still had the crunch none-the-less and tasted quite good...especially when dipped in a good pizza sauce.  The recipe for the zucchini fries is quite easy and comes together quickly.

Ingredients

Zucchini (I used three and had leftover breadcrumbs and egg wash)
2 Eggs
4 Tbs Water
 1/2 c. Breadcrumbs
1/4 c. Grated Parmesan Cheese
1 tsp dried Italian seasonings
1 tsp garlic salt


Directions

Preheat oven to 425 degrees.

Cut the zucchini into strips.  The thinner the strip the quicker they cook and the crunchier they will be.


Mix an egg wash with the egg and water.


Mix the breadcrumbs, Parmesan cheese, Italian seasonings, and garlic salt.

Dip the zucchini strips into the egg wash.

Coat the zucchini strips with the breadcrumb mixture.

Place the zucchini strips on a foil lined baking sheet.


Bake in the oven for 10 min.

Turn the zucchini strips over and bake for another 10 min or until golden in color.
